While roaming the streets of Bangalore, we stumbled upon this place called “hot coffee” near Vijay Nagar Metro station.

This was the most authentic South Indian Filter Coffee experience we had in a long time. The taste was on point. The chicory to coffee ratio was also on point. We have the same ratio of chicory to Coffee in our Chicory coffee blend the “estate secret”. 🤫 

Making this coffee at scale is quite remarkable and so we had to stop and ask a few questions to Mr. Sashi Kumar who was making this Coffee 500 times a day, with the same precision every time.

How to drink chicory coffee correctly?

Assuming you have mastered the art of making chicory coffee using Indian coffee filter. The next step is to pour the coffee correctly.

step 1. get your brass tumbler pair.
step 2. Fill the tall tumbler with coffee. 
step 3. draw a long pour from the tall tumbler into the short tumbler. 
step 4. Sip the magic of chicory coffee

Specialty coffee scene has exploded in India since 2020. Before we head to the farms in Chikmagalur, we wanted to spend some time in the city of Bangalore checking out local cafés. We stumbled upon this cute Cafe called LEVISTA on church street just outside the Metro station.

They are serving specialty Indian coffee varieties like S9, both washed and anaerobic. The café is always crowded. We had a chance to speak with the Cafe manager and asked him what is driving the specialty coffee boom in India lately. he made a very curious observation. 

He said, after the pandemic, a lot of Indians, who lived overseas, returned to the homeland and realized they couldn’t find the specialty coffee shops. They started their own local roasting companies and coffee shops to serve specialty coffee. These cafés have attracted the attention of the youth, making specialty coffee the fastest growing segment in the Indian coffee industry.

Le Mil’s coffee
So we had bunch of unsold coffee from October which we are giving away. Thought we should taste one of these “old” beans ourselves.

We recommend fresh beans because we have them roasted every 2 weeks, so do most of the local roasters. But if the if those beans are sitting in your kitchen for a couple of months, don’t discard them. They are perfectly fine as long as they are sealed and stored dry.

Today Le Mil’s coffee is 1 year old and we are still as excited and nervous as we were on day 1. It’s hard to believe that we sold almost all the green beans we brought here from the 2024 harvest.
