Indian Arabica Coffee blended with Indian Chicory root powder. This blend is used in Indian Filter Coffee. A blend that was introduced to India by British during world war II and now the most popular Coffee blend in India. Every roaster has a different take on this blend and so do we! Our recipe meticulously crafted to redefine your filter coffee experience.

This blend comprises 20% Chicory and 80% Arabica beans. Just like the coffee farm, this ratio of chicory to coffee is also passed down for generations. Contains 20% Chicory root grounds which brings the perfect balance of rich, velvety texture and mouthfeel with long lasting flavor.

Chicory has “inulin”, a prebiotic. A substantial amount of clinical research suggests that Chicory can promote gut health by stimulating the growth of beneficial gut bacteria while decreasing other germs and bacteria in the intestines.

Finally got this permit to give the samples in Newark Farmers Market. today we are giving South Indian Filter Coffee samples till 1 PM In India, the traditional coffee recipe is known as “filter coffee” or just “kaapi”. and it’s always a blend of specialty Indian coffee and chicory root powder. The golden ratio of coffee to chicory is 80 to 20. It has been our family standard for five generation, and we think it brings the perfect balance of heavy, rich, velvety texture, and mouthfeel with long lasting flavor. filter coffee can be brewed in a traditional, Indian coffee filter or a mocha pot. The basic principles of coffee roasting. Heat, power and air. The delicate balance of all three is required in coffee roasting. When you have new beans, it takes a few attempts to figure out the correct flavor profile of your bean. What would be the right end temperature? How long should be the drying phase? How long should be the yellowing phase and how long should you keep the bean in the chamber after the first crack? it was fun to replicate the roasting process on these small machines. What makes Chikmagalur coffee so special? It’s not only the story of origin of coffee in India. It’s not only the journey this bean made from Yemen to the hills of baba Budangiri. It’s also the coffee sub species/varieties that came together to give birth to this sweet smelling coffee cultivar. It’s made up of 1. Baba Budan’s first Arabica variety that he brought to India from Yemen, most likely a Typica variety, 2. Liberica (S288), 3. A hybrid of Typica and a mysterious/unknown variety from Doddengoda estate in Mysore. This was selected by an English coffee planter L.P. Kent and is often referred to as the Kent. In this clip @drsteffenschwarz, an expert coffee researcher, gives a brief history lesson on S795. I couldn’t resist the urge to share it because it was explained so beautifully! Never knew the science behind pouring coffee into a cup until now… During the opening week of @chayakada.us in San Jose along with tasting Filter Coffee recipe, we also tasted some of the tea offered by Aleena. we were inspired by how smoothly Aleena long poured the tea into the cup. We have always seen this in Indian tea shops, but we never knew why until now. We always thought it was a visual trick to captivate the customers but that’s not true at all. The real reason behind this type of pour is to mix as much air as possible into your beverage. Back in the day there weren’t frothing machines so they figured out that you pour the beverage into the cup from atop, it would mix air bubbles into the beverage and create a thick, creamy froth that makes the beverage a little bit more flavorful. Aleena and @chayakada.us are staying true to the traditional recipe. Because even though we have frothing machines now but it can’t replace the visual satisfaction of a meter Chaya. Forgot to tell, they have Le Mil’s filter coffee on the menu :) . San Jose, check them out!
