Meet Mr. Edwin and Juan Arauz, a father-son duo from Finca Arauz in Boquete, Panamá. They welcomed us to their farm and shared their 5-stage post-harvest process for selecting the finest coffee beans. 

Their farm in Palmira district, near Boquete, Panama. The region is known for its exceptional quality coffee. Arauz family cultivates Catura, Catuai, and Pacamara varieties at an altitude of 1100-1200m. The unique combination of volcanic soil and tropical microclimate gives their coffee a distinct flavor profile. 

We're excited to return with samples from their 2024/25 harvest, featuring Catuai, and can't wait to taste the sample roast - the first from Panamá! 

Our mission is to source directly from farmers, and we're committed to building direct relationships with farmers worldwide to bring you the best coffee directly from their farms.

Small farmers are still handpicking their coffee cherries. Why is handpicking important? 

It’s because the ripeness of a coffee cherry is crucial for a great-tasting coffee. Fully ripe cherries boast optimal sugar levels, balanced acids, and complex aromas, leading to a sweet, nuanced cup. Underripe cherries result in sourness, while overripe ones can create fermented off-flavors.

That’s why handpicking separates great coffee from good coffee. Coffee cherries on a single branch ripen at different times. Handpickers carefully select only the perfectly ripe, vibrantly colored cherries. This meticulous process prevents unripe or overripe beans from tainting the batch, ensuring superior quality and a consistently delicious coffee experience.

Honest reviews of Panamá geisha!

Since we hear a lot about Panamá geisha in the specialty coffee space, we wanted to know why there’s so much hype around this coffee. Someone in Korea paid $1300 per kilogram of Panamá geisha this year. That should tell you something about the desirability of this particular coffee! 

We wanted to taste the Geisha at the source. So we did what we must. We flew to Panama, straight to the farms. Tasted the Geisha in different parts of Panama. Washed, natural and honey processed. No fermentation! They are very traditional about the coffee process in Panama.

We are no experts by any means and this review is just us having a good time on really great coffee! We really enjoyed the cup but will we spend $30 for 8oz of beans???

In India, the traditional coffee recipe is known as “filter coffee” or just “kaapi”. and it’s always a blend of specialty Indian coffee and chicory root powder. 

The golden ratio of coffee to chicory is 80 to 20. It has been our family standard for five generation, and we think it brings the perfect balance of heavy, rich, velvety texture, and mouthfeel with long lasting flavor.

filter coffee can be brewed in a traditional, Indian coffee filter or a moka pot. Add some milk and just a tiny bit of sugar. make sure to enjoy that coffee while it’s hot.

Alicja from @tielhandmade made an exfoliating soap from our coffee grounds. Isn’t it amazing!!

Alicja is our regular customer at the Newark farmers market. She also is an artisan soapmaker. A few weeks ago she bought a lot of Coffee from us and told us that she was going to make soap from it!

Today, Alicja showed us the soap. It smells heavenly and we ended up buying 2 pieces immediately. If you want to get a piece from this first ever batch of coffee soap, check out her Etsy store link in @tielhandmade bio!

Day in life of Le Mil’s Coffee!

Starting at the @corocoffeeroom we picked up the fresh 5/13 batch. Thank you Joel for roasting.. you are the best!

because we were already in Berkeley, we made some local deliveries in the Berkeley and East Bay Neighborhood. By 2 PM we were really starving looking for a place to eat. We stopped by @bangkokbythebay for lunch and while waiting for our table decided to walk around and appreciate the rose garden in their front lawn.

next stop Aleena’s @chayakada.us! Drove from Berkeley to San Jose. Battery was already drained but we made it with just 5% remaining and made our first delivery of chicory coffee blend to @the.bread.bae !

Next up, Filter Coffee tasting session with Aleena and Shanti. We made some filter coffee and made some more until we fine tuned the recipe! The coffee tasting session quickly escalated into chai tasting session. By the end of it, we had tasted at least 3 more ethnic tea recipes from Kerala! Can’t wait for @chayakada.us to open. (Next month 🤫)

we had left the car supercharging while at Aleena‘s. Time to make drive back to San Francisco. Reached home around 7:30 PM changed and started packing the orders that needed to be shipped over the weekend.

By 8:30 PM, all the boxes were packed, labeled and ready to be shipped! 9:30 pm was dinner, watched a movie that I can’t even remember now and hit the bed by 10:30.

Weekends are for relaxing, rejuvenating and enjoying your favorite coffee. We often experiment with different beans on the weekends and today we decided to open the all Indian espresso blend Chikka. This batch was roasted in January. We wanted to see if the Coffee is still any good in May.

The Coffee still has the same strong aroma, the same bold taste and it still reminds me of Chikmagalur ❤️
